Why not just edit overall_header.html and overall_footer.html to match the overall look and feel of your site? I'm pretty sure that's all phpbb.com does.

One thing I'd worry about in switching to either vBulletin or IPB is the security of the software. When I started using phpBB, I was in the same boat as you. Never heard of MySQL, never knew what php was, and had only a very basic knowledge of HTML. But it's very easy to set up, and there's a good support community as well. I've tried out a few other bulletin boards since, but nothing comes close...
