I ask is normal that every time I edit on acp I get a red banner with this writing

First of all you have a problem with your language pack as that is a raw language variable. The full error message reads

phpBB encountered an error building the container due to an installed extension. For this reason, all extensions have been temporarily disabled. Please try purging your forum cache. All extensions will automatically be re-enabled once the container error is resolved. If this error continues, please visit <a href="https://www.phpbb.com/support">phpBB.com</a> for support.

Basically there is a problem with one, or more, of the extensions that you have on your board.

poi provo a disababilitare le mod ad una a una

I removed several ext, but I always see the message, now the whole message is clear, because it is the language, but despite I removed so many ext that message remains

I disabled all mine, I deleted the cache but when I fixed this error

Delete everything in cache production folder. If that doesn't help then one of those extension made a mess.

You have a problem with one, or more, of the files in an extension. The only way forward from here is to delete the data for the extensions one at time until the error goes away.
