Conventions, some of which are (almost) global + it depends on what the number is used for
e.g. 11111101001 is understandable in all languages (as binary is the base) but it's not handy to use in daily life.
Calculations using Roman numerals are already surprisingly difficult- the brain automatically transforms those to decimal. It automatically chooses to try something familiar and less complicated to use. Try to multiply 2 Roman numerals e.g. XXV times LXXXI without writing it down. If you succeed within a minute: not bad but compare that to the same multiplication using the decimal notation.
