I have a slight problem. It seems the permission system has issues.

It shows I should be able to add videos but at the same time it says I can never. I am the founder and main admin. What is the deal?

Server side conversion of uploads to FLV (as long as your webhost supports the tools required (ffmpeg/flvtool2/mencoder), or you can install them on your own server (i.e. you will need a dedicated server or VPS))
